Delicious Tropical Recipes

1 - 8oz French Brie Cheese
4 to 6oz of "Jacquie's Jamming's" Fabulous Mango Jam
1/3 cup Crushed Nuts, of your choice

Cut off the top crust of the Brie Cheese, and place in Baking Dish.

Pre-Heat oven to 375*, and bake for 10 minutes to soften. Then remove from oven, and, keeping the cheese in original baking dish, spread Jacquie's Mango Jam over the whole top, then sprinkle the Crushed Nuts over the Mango Jam.

Return to oven for another 10 - 15 minutes, until cheese melts.

Serve in original baking dish with Crackers or Crispy French Bread and stand well back, your guests will trample over you to get to it!!

4 Medium fillets of your favorite fish
4 Tablespoons of "Jacquie's Jamming's" Special Mango Chutney
1 Tablespoon of Lime Juice
1 Teaspoon of grated fresh Ginger
1 Clove of Garlic, crushed
½ teaspoon Cumin
½ teaspoon chopped fresh Coriander Chili powder, to taste

Combine all ingredients as a marinade, and spread over fish. Leave for at least 20 minutes.

Grill or Bar-B-Q the fish fillets until cooked through, basting with remaining marinade.

Or, to Microwave, cover with cling-wrap, and microwave for 1 to 2 minutes, depending on thickness of fillet

Pork Loin Roast Stuffed with Chutney & Apple


1 Pork Loin
1 Jar "Jacquie's Jamming Chutney"
1 Granny Smith Apple, thinly sliced, skin on or off
Olive Oil
Salt & fresh ground Pepper
Butcher's Twine       Oven Roasting Pan

Pre-heat oven to 450 F

Cut Butcher's Twine into 10" to 12" lenghts.
Place 5 to 7 Twines in equal distance across with of the roasting pan.
"Butterfly the Loin and place open and flat in pan over twine.
Spread chutney liberaly over both open sides of loin.
Add sliced apple to one side of loin.
Lightly salt and pepper according to taste.

Close up loin and tie twine tight to seal.
Add more salt and pepper on outside.
Drizzle olive oil over the top and gently roll lion in the oil.

Cool at 450 F for 20 minutes per pound, and when cooked, remove and let rest for 10-15.
